OVERALL RESPONSIBILITIES:
Organizes, coordinates, and participates in the food preparation for the required cooking station.

Maintains food preparations up to standards and responsible for the quality of all food to be served at The Bistro and Banquets.

Food Preparation
· Prepares food on consistent quality following the use records and the restaurants chef’s specifications.
· Gathers the entire required product for production from food storerooms using the proper product requisition forms.
· Uses production charts/prep lists to assure stations are stocked before service.
· Cooks orders as per bill, assigned by the restaurant chef. (Deep fry station or Garde manger)
· Starts any food items that can be prepared ahead of time, making sure not to prepare over-estimated needs.
· Practices sanitation standards at all times.
· Ensures all food is rotated (FIFO) and properly labeled and dated.
· Portions all items on assigned station properly using the use records.
· Controls food waste, loss and usage per SOPs.
· Prepares vegetables and condiments, as required, for the next shift.
· Returns all food items not used on next shift to designated storage areas.
· Understands 39 pt food safety/wholesomeness checklist.
· Stores all food according to HAACP.


EDUCATION & EXPERIENCE:

§ High school or College diploma is an asset; 3 years experience in the food and beverage, culinary, or related professional area.
